Just spitballing a bit here, but I came across this old hackaday article:

and a though occurred to me that terminals and bartop arcade cabinets are quite similar: A case with a display and control mechanism integrated into a similar shape:

So it would be kind of cool to build a cabinet that has drop in control boards. Maybe powered by an SBC or old ITX PC.
choose whichever control board you need and plug it in via USB then drop it into the front of the case.
I dunno. Haven't thought it through or anything just putting the thoughts out into the world.
